Vegetable Pancit

Pancit with some sliced Philippine lime.

If you haven’t had Pancit I think you’re missing out. This dish is one of Philippines famous food list. We Filipinos cooked this Noodle dish different ways. In this recipe I will give you the best Vegan Pancit you’ll ever have.

Ingredients:

-1 16oz package of Mung bean or Rice thread noodles (Bihon)
-1 16oz package of dried yellow wheat noodles (Canton)
-2 cups of cabbage (green or purple)
-1 to 2 tbsp. cooking oil -1 cup carrots (julienned)
-1 to 2 stalks of celery (sliced)
-1 cup onions
-2 garlic cloves
-2-3 stalks of green onions (seperate white parts and save top green parts for garnish)
-4 cups water
-1/2 cup soy sauce
-1 tbsp. of mushroom or vegan bullion powder
-1 tbsp. dark soy sauce
-1 tbsp. vegan oyster sauce
-2-3 pieces calamansi or lime/lemon
-salt and pepper

How to:
1.) First stir-fry onions, garlic in cooking oil, add celery and carrots, add cabbage. After stir frying set aside on a bowl.
2.) Same pan or wok add liquid ingredients water, soy sauce, dark soy sauce, mushroom powder or vegan bullion, vegan oyster sauce. At this point you can taste and adjust the seasoning. If its savory enough for your taste then….
3.) Add the mung bean thread noodles let get soft and absorb some of the liquid once its soft add the dry wheat yellow noodles (tip: Filipino brand yellow noodles cook faster than the mung bean thread so you can add this noodles 5 or less minutes before the mung bean thread noodles are done and also this yellow noodles are typically salted so you done have to let it soaked up too much on the broth.)
4.) Once all liquids are absorb, add the stir fry veggies and mix together.
5.) Serve and garnish with green onions, calamansi/lime/lemon and pepper.
