Filipino version of Paella commonly served during special occasions. My vegan version of this dish I prepared with glutinous rice (malagkit) , imitation chicken substitute , vegan hotdog, carrots, peas, bell peppers for ectra veggies, potatoes, raisins, vegan boullioun for seasoning, turmeric for color and coconut milk for authentic flavor. Ingredients
-3 cups Glutinous Rice (Malagkit)
-1 small onion (diced)
-5 to 6 cloves of garlic (minced)
-2 tomatoes
-1 tsp turmeric for color
-1 can coconut milk (rice may vary might add 1/2 cup to 1 cup of water to coconut milk)
-2 vegan bouillon cubes or 2 tbsp. of mushroom powder for seasoning and may adjust to your taste
-2 bay leaves
-tsp Safflower (dried)
-1 cup potatoes (fry)
-1 cup bell peppers (fry)
-1 cup carrots (fry)
-3-4 tbsp. peas (add more if you want)
-2 tbsp. raisins -2 tbsp. sliced olives
-1 cup vegan chicken (meat substitute) of your choice
-1 cup vegan hotdog
-4-5 pieces of Banana leaves (you can find this at a local Asian grocery store frozen, just thaw a day before, wash, dry and toast it for few seconds stove top
How to:
It seem lots of ingredients but its really easy to make and all you have to do is wait for it to cook.
1.) Prep your Banana leaves
2.) Wash, rinse and dry Glutinous Rice (set aside)
3.) Fry potatoes, carrots, bell peppers, meat substitute and vegan hotdog in 1 tsp of cooking oil (set aside)
4.) In a wok or a pan with lid sauté’ onions, garlic, tomatoes.
5.) Once tomatoes are softy and cook add turmeric powder, coconut milk and water. Add vegan broth cubes or mushroom seasoning.
6.)Taste and adjust here this will be the based and flavor of the entire dish.

8.) Add Bay leaves
9.) Add rice and let it soaked up the liquid on a medium-low heat stirring occasionally so it doesn’t stick to bottom.
10.) Mixed in the peas, olives, and raisins.
11.) Add the fried vegetables, meat substitute and vegan hotdog.
12.) Rice will be uncooked, this time you will have to transfer the dish into a bowl and add your banana leaves on the bottom of the pan, put back the rice mixture, put more banana leaves on top and cover it with lid.
13.) Cooking time will be at least 45 mins to 1 hour on LOW HEAT.
14.) Another way of cooking this is by steaming: You will need the entire package of Banana leaves, prep and ready. You will need to wrap it individually in banana leaves and steam for 30-40 mins.
