A Filipino dish that can easily be Vegan by opting out any meat or seafood. In this version of mine I used tofu and added spinach for protein and vegetable pack meal serving over rice.
Ingredients:
-2 cups of dried green mung bean (soaked 3-4 hours)
-1 package of extra firm tofu (cubed)
-1 tbsp. cooking oil
-1 small onions
-2 to 3 garlic cloves
-1/2 cup tomato (diced)
-2 cups fresh spinach
-1 cup bean sprouts (optional)
-3 to 4 cups water
-2 tbsp. mushroom powder or 2 cubes vegan bullion
-1 tsp salt and pepper.
How to:
1.) Soaked dried mung bean in water for 3-4 hours or till double the size, after soaking rinse and set aside.
2.) Fry cubed tofu till crispy on all sides (set aside)
3.) Sauté garlic, onions and tomato.
4.) Add water, 1 tsp salt and soaked mung beans let it boil on low-medium heat, after 5-10 mins check if mung beans are soft. Once mung beans are done you can add the fried tofu, season and adjust to taste with mushroom powder or vegan bouillon.
5.) Add spinach and bean sprouts till wilted
6.) Serve over hot steamin rice or just eat it as is.
